HEALTHY CHOCOLATE CAKE

Editors Note: This is a recipe from my gorgeous friend Georgia’s Good Health Nutrition blog. She has some delicious recipes that I’d love for you to check out, and a pretty powerful story to share with you all too. 

This week she’s sharing her “Healthy Chocolate Cake” recipe, and seriously, it tastes JUST like the naughty version – actually, even better!

HEALTHY CHOCOLATE CAKE

Ingredients: 

1 cup almond meal

1/2 cup cacao powder

1 tsp baking powder

1/4 cup coconut oil, melted

1/2 cup rice malt syrup or honey

1/2 cup boiling water

3 eggs

1 tbsp chia seeds

To make: 

Preheat oven to 170 degrees Celsius.

Combine dry ingredients in a large mixing bowl. Once combined, add in melted coconut oil, honey, water, chia seeds and egg and mix until all ingredients are incorporated.

Pour into a greased and lined circular baking tin. Place in the oven and bake for approx. 20 minutes.

Turn onto a cooling rack and leave to cool for a few minutes.

Recommendation:

Serve warm with fresh strawberries.
