This week she’s sharing her “Healthy Chocolate Cake” recipe, and seriously, it tastes JUST like the naughty version – actually, even better!
HEALTHY CHOCOLATE CAKE
1 cup almond meal
1/2 cup cacao powder
1 tsp baking powder
1/4 cup coconut oil, melted
1/2 cup rice malt syrup or honey
1/2 cup boiling water
1 tbsp chia seeds
Preheat oven to 170 degrees Celsius.
Combine dry ingredients in a large mixing bowl. Once combined, add in melted coconut oil, honey, water, chia seeds and egg and mix until all ingredients are incorporated.
Pour into a greased and lined circular baking tin. Place in the oven and bake for approx. 20 minutes.
Turn onto a cooling rack and leave to cool for a few minutes.
Serve warm with fresh strawberries.
